Last May, Elizabeth Baird and I had the good fortune to attend a class with Chef Pilar Cabrera Arroyo in her cooking school “Casa de los Sabores” (House of Flavours) in Oaxaca City. Her passion for the Oaxacan ingredients and flavours shone through in the careful detail of every dish. This week, the Stratford Chefs School has brought Pilar to Stratford as their Celebrity Chef in Residence to teach students the art of true Mexican food where mole making is a bold departure from the traditional European sauces with which they start their training. According to the school’s co-founder Eleanor Kane, “Pilar’s visit anchors the Stratford Chefs School objective of enriching our curriculum with ‘world cuisines'”.
