Baking Catfish on CTV

March 2, 2010 at 1:18 pm Leave a comment

Tomorrow on my regular spot on CTV’s Noon News, I’ll be making a fun dish with catfish. Farmed in an environmentally friendly way, catfish is available year-round and is popular with cooks and chefs because of its mild sweet taste, firm texture and versatility. It can be sauteed, stir-fried, grilled and baked for starters. I will do a baked version with a delicious rub and serve it up with a quick-to-make slaw the kids will love. Check for Baked Cinnamon Chipotle Catfish with Sweet Pepper Slaw on my Recipe page.  Or, go to www.catfishinstitute.ca for this recipe as well as many other recipes and cooking tips.
